Campground Dinners: Chicken Porridge

Chicken Porridge

Ingredients:

– Carrots

– Onion

– Celery

– Butter

– Chicken

– Chicken Broth

– Flour 

– Heavy Cream

– Steel Cut Oats

– Salt

– Pepper

– Roasted Garlic & Herb Seasoning (Webers, I think?)

Recipe:

– chop equal parts carrot, celery & onion

– in pot, sweat/saute the chopped veggie with a half stick of butter. Season to taste.

– add chicken, finely chopped. I used canned chicken, so mileage may vary with raw chicken.

– add broth, cover to simmer until vegetables are soft (I did this in a pressure cooker) 

– add a bit of flour to thicken & stir in a bit of heavy cream.

– add in the oats & simmer until they are cooked per packaging. Amount is subjective, I think I did about a cup to what was a half gallon zip lock bag of veggies.
